KHAO TOM a.k.a. RICE SOUP

Cooler weather has finally arrived. So have allergies and colds. There seems to be a whole lot of sniffling and sneezing making the rounds. This is a real easy recipe to comfort and soothe those suffering souls.

Khao Tom/ Thai Rice Soup

4 cups of Asian chicken broth (Use Swanson’s full sodium chicken broth, add a couple of smashed slices of fresh ginger, two cut up scallions and a pinch of sugar. Simmer for 20 minutes and strain.)

2 cups of cooked chicken, shredded (white or dark, doesn’t matter)

2 cups of cooked rice (any kind of rice will do)

fresh ginger, julienned (as much as you like)

2-3 scallions, thinly sliced

1 thai chili, serrano, or jalepeno

a handfull of cilantro

thin soy sauce (regular will do) or Maggi seasoning, to taste

white pepper, to taste

white vinegar, to taste

Directions:

Bring chicken broth to a boil. Add chicken, rice and fresh ginger. Reduce heat and simmer for 5 minutes. Add soy sauce or Maggi to taste. Laddle into bowls and serve with chilis, cilantro, white pepper, and vinegar on the side. Let each person customize their individual bowls of soup. That’s the Thai way!
