It’s 11:30 PM and I am just sitting down for the first time since 9 AM. By 3 PM the temperature in the kitchen had reached 97 deg. F. Fourteen hours of “Don’t slow down now!”. 14 hours of listening to the servers complain about the heat, even though you could practically see your breath in the air-conditioned dining area. There’s no getting around it:
