It’s all about the balance.

It almost never fails to happen. A server will get sat a really shitty table. The kind that want all sorts of attention, are in a big hurry, usually have children in tow, make a huge mess and leave a $3.00 tip on a $40.00 check. You know what I’m talking about. Said server will then come into the kitchen and want to share their “poor pitiful me” story with the cooks. Do we feel sorry for them? Of course we don’t! This isn’t our first rodeo. We know that before the shift is over, that same server will come bouncing back through the kitchen gloating about this:
