The record for taco Tuesday is 728 tacos. We almost hit it yesterday with 722. So close. We did manage to sell a crap load of beef tongue tacos, which is amazing considering the granola neighborhood we are located in. This is the beef tongue after we smoked it:
Today we turned a couple of the tongues into a pasta salad, Cheese Tortellini and Fresh Spinach with Smoked Beef Tongue:
It’s amazing how much people like a little tongue once you get them to try it. 😉
